BUTTER SUBSTITUTES

“The farm papers say the copra out of which vegetable margarines are made is filthy. What about it?”
Naturally the farm papers oppose the butter substitutes. That is their business. They get a heavy tax put on these substitutes. They make it unlawful to color them. They do all they can to run out any butter substitutes so as to keep up butter prices.
I consider the coco butter made from copra cleaner than dairy butter. This fat is put through a cleansing process at a high temperature that sterilizes it. There is no way to sterilize dairy butter without ruining it. Dairy butter is never sterile.
