The Proteus Microbe.

Gastro-enteritis, the disease which destroys ten thousand infants yearly, is caused by a microbe named the proteus, found in fruits and vegetables, butter and cheese. Professor Metchnikoff declares that the great remedy is soap. Nursing-bottles should be thoroly cleaned, and should not be handled by soiled fingers. Fruits and salads should be plunged into boiling water before eating them, and cheese should be scraped. Referring to the latter food, in the case of most kinds of cheese, it would be well to scrape it all away. It is one of the most indigestible foods known.
